Designed in 2009 as the signature drink for the re-opening of The Oyster Box by the hotel’s mixologists the Umhlanga Schling uses the best and freshest produce exclusive to the east coast of Kwa-Zulu Natal. The Cane Spirit used in this cocktail is also home grown, made from sugar cane farmed locally. You can enjoy this bespoke cocktail from one of the hotel’s stylish bars or balconies, overlooking the Indian Ocean and the iconic lighthouse, or try making it at home!

THE UMHLANGA SCHLING

 

INGREDIENTS:

  •  50ml Mainstay Cane
  • 25ml sugar syrup
  • 4 pineapple pieces
  • 12 mint leaves
  • 75ml mango Juice
  • Sugar Cane 30cm
  • Crushed Ice

METHOD:
To the shaker add the Cane Spirit, sugar syrup and two slices of crushed pineapple and hard muddle (shake) for 10 seconds. Add the mint, clapped between your hands/ not crushed, to release the aromas and prevent it from going bitter. Place the crushed ice in a Hurricane Cyclone glass so it is ¾ full, add the mixture and stir clockwise for 10 seconds. Fill glass with crushed ice and top up with mango juice. Garnish with sugar cane and a pineapple wedge on the rim. Enjoy!

We appreciate that not everyone can be sitting back and relaxing on the east coast of Kwa-Zulu Natal so we have a couple of ingredient alternatives Mainstay Cane Vodka can be replaced with Grey Goose and the sugar cane garnish with a fresh stalk of celery.
