The George V Dining Room at Ashford Castle is one of the finest rooms in Ireland steeped in history with its wood panelling, 11 Waterford Chandeliers, a World Class Wine List and a truly great Chef all makes for a great experience.
We have been honoured to welcome many industry experts including Baron Patrick de Ladoucette , Paul Pontallier of Chateau Margaux, Jonathan Maltus of Chateau Tessyier ,Margaret Duckhorn of Duckhorn Vineyards, Louis Fabrice Latour of Domaine Latour, Jacques and Roz Seyesses of Domaine Dujac and David and Catherine O'Brien of Chateau Vignelaure to name but a few.
Supported by the culinary team of Stefan Matz, Executive Chef of the George V Dining Room, diners sample locally sourced, seasonal dishes that are expertly matched with each wine presented. Stefan’s attention to detail has earned him Chef of the year honours from the Georgina Campbell Guide and the Dining Out Guide.
In line with our enthusiasm for fine wine, Red Carnation supports and works in close affiliation with our sister company - the celebrated Bouchard Finlayson winery. Makers of some of South Africa’s most distinguished wines, Ashford Castle is proud to present a range of these outstanding vintages.
